Low-Carb Muffin-Egg Muffin
1 cup cheddar cheese
salt and pepper
bell pepper, mushrooms, onions, spinach, or other omelette’s ingredient
Cook bacon if using bacon. I usually use a VERY sharp knife and cut it while raw (you want small pieces) and then just fry it in the frying pan.
Blend together milk, seasoning, and egg in a bowl. Have a muffin tin ready. pour a little in just enough to coat the bottom of the pan, then put in the ingredients (meat/veggies) sprinkle a little cheese then top with more egg (till about 3/4 full), and then top with cheese.
Preheat oven to 350*. Cook for about 20 minutes. Make sure to keep checking the first couple batches just to double check how done they get and that you don’t burn them. (Sometimes time varies depending on oven, and altitude)
