1 can (10 oz) Ro*Tel Original Diced Tomatoes and Green Chillies, drained and divided
1 can (16 oz) Rosarita Traditional Refried Beans
2 cups guacamole
1 cup (4 oz) shredded cheddar cheese
1/4 cup sliced green onions
1/2 cup sour cream
1/4 cup sliced ripe olives
Reserve 1/2 cup of the drained tomatoes; set aside. Combine the remaining drained tomatoes and beans in a medium bowl; mix well. Spoon bean mixture evenly into eight (4 oz) martini glasses. Divide the guacamole, cheese, reserved tomatoes, onions, sour cream, and olives equally in layers over the beans between glasses. Insert one tortilla chip in dip of each glass for garnish. Serve with additional tortilla chips, if desired.
Margarita glasses (8 to 9 oz) may be used if one would like double-size appetizer portions or appetizers to share.
