Curried Chicken and Grape Salad

Prep 10 minutes    Chill 15 minutes       serves 4      cost per serving: about $3.41

Ingredients:
1/4 cup light mayonnaise
1/4 cup plain low-fat yogurt
2 tsp. curry powder
1/2 tsp grated lemon zest
1/2 tsp salt
3 cups shredded cooked boneless, skinless chicken
1 cup seedless red grapes, halved
8 cups baby spinach
1/4 cup sliced almonds, toasted

Directions

1. Whisk together mayonnaise, yogurt, curry powder, lemon zest and salt. Combine chicken and grapes in a large bowl, add dressing and toss to coat. Chill for 15 minutes.

2. Arrange spinach on 4 dinner plates. Top with chicken salad, sprinkle with almonds, and serve.

I just tried this! YUMMMM! Instead of plain salt I used seasoning salt and I added some pepper. You can definitely use more curry powder too!
