Savory Cherry Compote

Prep time 20 minutes



1 tbsp olive oil
1 shallot, minced (or substitute 2 Tbsp. minced onion)
1 tsp. fresh rosemary, minced
1/4 cup red wine, cherry juice, or water
1 lb fresh sweet cherries, pitted and halved
1/2 salt
1/4 tsp pepper


Heat olive oil in a small saucepan over medium heat. Add shallots and saute for about 3 minutes, or until they begin to soften. Add rosemary and cook for another minute. Add wine, cherry juice, or water and cherries. Bring to a boil; reduce heat and simmer until cherries are soft and liquid is slightly thickened, about 15 to 20 minutes. Stir in salt and pepper.

Cool slightly or to room temperature. Serve in a small bowl with roasted or grilled meat. Refrigerate any leftovers. Makes six servings about 1/2 cup each.
