Orange Chicken and Rice
1 cut up broiler fryer chicken, or about 3 lbs chicken parts
1/3 cup frozen orange juice concentrate
2 tablespoons butter
1/2 teaspoon ground ginger
hot cooked rice for 4
Sprinkle chicken with salt and pepper; place chicken parts in large foil-lined baking pan, skin side up. Bake at 375 degrees for 35 minutes. In a saucepan, combine orange juice concentrate, butter, and ground ginger. Heat through. Spoon orange sauce over the chicken and bake 20 minutes longer or until tender. Serve orange chicken and drippings with hot cooked rice. Orange Chicken and rice recipe serves 4.
